Wikipedia summarizes conflict of interest quite nicely:

A conflict of interest (COI) occurs when an individual or organization is involved
in multiple interests, one of which could possibly corrupt the motivation for an
act in the other.

In OSS development some business models such as open core tend to generate more conflicts of interest than others. On one side, you have the company developing the application, and on the other it's users and would-be developers.
